Your summer wedding cake…

It’s been a long winter. A really long one... I love spring and spring blossoms galore, but I think we all earn for the long hot days of summer.

Wedding flowers in the summer season are big and bursting with bright colour, something that has been a huge wedding cake feature - bold sugar florals with hot pinks, corals, peaches and gorgeous bright yellows.

Sugar dahlia, peonies and chrysanthemums have taken up the role of the rose in terms of larger blooms. They cover a lot of space and make a huge statement coming in all shades, from brights to pastels and even tonal whites. There is always space for a rose but I feel peonies (and friends) offer a fresher, looser and more contemporary feel. I have created a few cakes with a wedding theme based on a summer English county garden, and what could be more lovely in those peak months? A glass of English sparkling wine and a little bit of cake…

Rustic cake, but not too rustic…

Summer wild flowers and meadow flowers are a huge trend with cosmos daisy and poppies in sugar for those brides wanting a rustic, but not too rustic feel for their day. Oranges, peaches and yellows come into their own here, mix with ‘grasses’ for that straight from the meadow look.

White summer wedding

You cannot ever underestimate white for a wedding or wedding cake design at any time of year, and definitely summer - tonal whites mixed with seasonal pastels makes for a beautiful and elegant cake. White roses, peony, scabious, anemone, dahlia, carnation, ranunculus - the options are endless for your sugar bouquet. Team with tonal green foliage or pale berries for contrast.

Summer cake flavour profiles

For flavours, this is the best time to get the best from seasonal fruits and berries, all of which are ripe and bursting with flavour. I hand make all of my fillings from scratch for a much better and more natural flavour. From raspberry compotes with a little less sugar for that hint of sharpness to cut through the sweetness, to rich citrus curds. Team with hints of summer herbs such as basil or thyme for a much more interesting and rounded flavour profile.

Afternoon tea anyone..?

A summer afternoon or high tea makes a wonderful alternative to a the traditional (and dare I say, becoming a bit naff?) dessert table.

I offer a bespoke range of hand made desserts from mini pavlova with summer fruits to mini sweet tarts and macaron.

I don’t make buttercream or semi naked cakes in the peak summer months any longer (unless very local) just due to temperatures making transportation and display a little too far out of my control! Fondant iced cakes are by far the safer bet, especially in some of the extreme weather events of recent times.
